Homemade Potato Soup and Grands Biscuits


 

 POTATO SOUP: 

4 large potatoes 

1 onion 

2 cups of milk any kind 

3 cups of water 

Add chopped potatoes and onion to pot and bring to a boil 

Mash down and add milk, salt, pepper 

Stir and serve with biscuits or bread of your choice 

You can add other veggies to this dish to enhance the flavor

Hamburger Helper, Bread, and Garlic Butter


 Hamburger helper is one of the easiest meals to make along with bread, which I will make in another video down the road, and here is the recipe for the garlic butter. 

GARLIC BUTTER: 

1 Cup butter 

2 Tablespoons of olive oil 

1/2 Cup of Parmesan Cheese grated 

1/8 Cup of Parsley 

2 Tablespoons of garlic salt or powder 

Add the butter to the mixer and churn until light and fluffy Slowly add olive oil, cheese, parsley, and garlic powder/salt 

Use immediately or store in fridge

Sourdough Sandwich Bread Recipe

 


LEAVEN:

1 cup plus 1 tablespoon all purpose flour
1/2 cup plus 1 tablespoon cool water
3 tablespoons sourdough starter
mix together in a bowl and cover for about 12 hours on counter.

DOUGH:

5 1/4 cups all purpose flour
6 tablespoons powdered milk
1/4 cup white granulated sugar
2 1/2 teaspoons yeast
4 tablespoons butter
1 1/2 cups of water
Add leaven and mix

Place dough in covered bowl for 2 hours and let it rise
Grease pan and place bread roll in it and bake for 40 minutes at 375 degrees
Remove from oven and let it cool on a rake or on parchment paper
Let it cool completely before slicing

Tater Tot Breakfast Casserole

 


1 lb bacon 

32 oz tater tots 

1/4 tsp salt 

2 cups of cheese of your choice 

12 eggs 

1/2 cup milk 

1/2 tsp onion powder 

1/2 tsp garlic powder 

2 table spoons chives if not more 

Preheat oven to 350 degrees 

Heat bacon and cook thoroughly, then drain grease with paper towels Grease 9 x 13 dish or what you have and spread tater tots on bottom Sprinkle 1/2 lb bacon and 1 cup cheese over tater tots 

In bowl whisk eggs, milk, onion powder, garlic powder, and chives together 

Pour over tater tots and place in oven until golden brown 

If you are using it the following day, cover with plastic wrap and place in fridge overnight

Cinnamon Roll Coffee Cake

 


COFFEE CAKE BATTER:
3 cups flour
1/4 tsp salt
1 cup sugar
4 tsp baking powder
1 1/2 cups milk
2 large eggs
4 tsp vanilla
1/2 cup melted butter

 


CRUMBLE:
1 cup brown sugar
1 tablespoon cinnamon

ICING:
1 1/2 cups powdered sugar
1 teaspoon vanilla
1-2 tablespoon water

Bake at 350 degrees for 30-40 minutes.

Happy Thanksgiving 2021

 


I was not only busy watching my granddaughter yesterday, but I created from scratch, 2 pumpkin pies and 2 apple pies along with a loaf of sourdough bread. 

 

PIE CRUST: 

3 Cups of Flour 

1 Teaspoon Salt 

1 Cup Butter 

3/4 Cup Ice Water Mix together well and wrap into a tight ball with plastic wrap. Put into the fridge for 1 hour, and cut into two halves--1 for bottom crust, 1 for top crust 

 


PUMPKIN PIE FILLING: 

1 - 15 oz can of pumpkin 

12 oz can of evaporated milk 

2 eggs 

3/4 Cup of brown sugar 

1/2 teaspoon salt 

1 teaspoon cinnamon 

1/2 teaspoon ginger 

1/4 teaspoon nutmeg 

1/4 teaspoon cloves 

I added a extra 1/4 teaspoon of pumpkin spice 

Combine all ingredients in a bowl and stir well. 

When ready, pour into pie crust for the oven. 

Bake 350 Degrees for 1 hour or more. 

 


 APPLE PIE FILLING: 

 6 cups of cut apples 

1 tablespoon lemon juice 

2-4 tablespoons real butter 

1 cup sugar 

1/4 cup flour 

1/2 teaspoon salt 

1/3 teaspoon ginger 

1/3 teaspoon nutmeg 

1/3 teaspoon allspice 

(1 egg white, 1 teaspoon sugar and 1 teaspoon cinnamon to brush over the top of the crust) 

Combine apples, lemon juice, flour, sugar and spices. Mix well and line to pie crust in round baking dish. 

Top apples with small slices of butter 

Cover apples with pie crust and seal edges of crust together. 

Whip egg white until foamy and brush over the top of crust. 

Cut a large X in the center and several others around it. 

Bake at 375 degrees for 50-60 minutes until apples are soft.

Chili & Dinner Rolls

 Chili & Rolls Rock. 

 

Sourdough Dinner Rolls: 

1 1/2 Cup of all-purpose flour 

1/2 tsp salt 

1/4 Cup melted butter 

3/4 Cup warm water 

1/2 Cup sugar 

1/2 Cup sourdough starter 

 

Add all ingredients to a bowl and mix knead for 5 minutes 

Place in greased bowl and cover in fridge or on the counter with a towel 

Allow to rise 12-24 hours 

The following day, divide into 8 pieces and brush top with butter 

Preheat oven to 350 Degrees Bake for 25 minutes until golden brown 

Allow to cool, and enjoy this tasty morsels.

Apple Butter

 


I decided to can apple butter today and enjoy the entire process. It took over 10 hours to complete--and maybe a little more because I was also dehydrating onions and planting apple seeds during the cooking process.
I will definitely do this again next year...

 

APPLE BUTTER RECIPE:

1 Cup granulated white sugar
1 Cup brown sugar
1 Tablespoon cinnamon
1/2 Teaspoon nutmeg
1/4 Teaspoon ground cloves
1/4 Teaspoon salt
1 Tablespoon vanilla
1/2 Cup maple syrup
Add everything to large pot and cook on high for 1 hour
Turn down to low and cook for 8-10 hours
Stir continuously
When finished cooking, blend thoroughly
Can with 1/2 inch headspace in a water bath for 20 minutes.

Blueberry Cobbler🫐🫐

 

This was terrific and even hubby liked it. 

 🫐🫐🫐

INGREDIENTS: 

 4 cups of blueberries 

1 cup white unbleached flour 

1 cup white granulated sugar 

1 teaspoon of vanilla 

2 eggs 

1/2 cup butter 

 

DIRECTIONS: 

Butter dish and pour in blueberries and sprinkle with vanilla 

Mix flour, sugar, and 2 eggs into a bowl 

Pour bowl mixture over blueberries and sprinkle with a teaspoon or so of white granulated sugar 

Pour 1/2 cup of melted butter over cobbler 

Bake at 375 degrees for 40-45 minutes

Sourdough Donuts, Sourdough Biscuits, & Keeping Your Sourdough Happy

 



I have never tried creating sourdough donuts or sourdough biscuits ever in my life, and I wanted to make my family my guinea pigs and just do it, no matter if this experiment failed or succeeded. I made sourdough and let it sit for 5 hours, then I prepared the donuts and biscuits. My son and husband thought they both were delicious. Using my sourdough like this is encouraging me to try numerous other creations. Happy Cooking...They were both absolutely YUMMY

Dehydrated Onions & Peanut Butter Cookies

 


I used the air fryer and the oven to dehydrate the onions, but I eventually used the air fryer for it all. I ordered a dehydrator and will do this again in the future. The peanut butter cookies were bonus.
